What's not to love about life around the lake. One thing's for sure is that lake side people love local!!
We caught up with local champion (and arguably legend), Susan who's running the YFC hub down at Warner's Bay to get the low down on how she got here and what she's loving right now.
What brought you to Newcastle?
Growing up in lovely Lake Macquarie, this region has always been home. I now live in Killingworth with my beautiful husband and 2 daughters, dog, horse, chickens, birds and fish. We love Killingworth because it is like a little country town (hence all the pets).
What inspires you day to day?
My husband inspires me to keep calm and to worry less (this is a work in progress). He gives me the strength to keep going when I start to run out of steam.
My gorgeous daughters inspire me to have fun and not sweat the small stuff (this is also a work in progress). They make me smile and laugh I am so lucky to have them.
My pets (yes I know this sounds funny but it is true). They inspire me to enjoy the simple things in life and live in the moment as they do. \
Do you have a food philosophy?
Eat healthy........ most of the time. Life is too short to not treat yourself now and again (or every night while watching TV as in my case).
Being vegan I am also very passionate about ethically sourced food and animal welfare.
What do you love about YFC?
I love that it has taught me so much about the importance of fresh, seasonal and local, and about supporting our farmers, and that I can pass this knowledge onto my daughters.
What’s your go to in the kitchen at the moment?
My daughter makes an amazing vegan lasagne, which is a popular choice in our house at the moment. Fried rice is another favourite and everyone loves taco night.
What are you looking forward to?
Summer!!! Wining and dining outside on the deck, listening to my daughters in the pool, and feeling like you are on holidays.
I am also looking forward to Christmas and our little family Christmas traditions. Night walks around the streets looking at Christmas lights, putting up our own lights (my husband’s worst nightmare), Christmas Eve dinner at our favourite picnic spot.
