Amazing Apricot Jam

by Bronni Page

Local Amazing Apricot Jam

Want 'in' on a pantry staple that's deceptively easy to DIY? It's jam! The truth is it's not hard to home - make jam at all. Some ripe, summer fruits, sugar, ginger and lemon is all you need. Oh, and a lovely glass jar helps too.

Jam is a wonderful way to preserve the flavours of your favourite summer fruits well after the beach days are over. We've gone for apricots here, but feel free to sub in whatever stone fruit takes your fancy - plums, peaches etc - or even a mix of whatever you need to use up.

Are you ready to make homemade condiments your 'jam'??

Amazing Apricot Jam

For approx 300g of jam, you will need:

500g apricots, chopped into small pieces
400g caster sugar
Small knob of ginger- grated finely
Juice of 1 lemon

Make it:

  • Start off by sterilising a glass jar - simply fill your jar with boiling water, pop the lid on and set aside

  • Add apricots, sugar and ginger (in that order) to a saucepan

  • Cook over a low heat until apricots have broken down and sugar dissolves

  • Add the lemon juice and bring to a boil

  • Simmer for 10-15 minutes, keeping an eye on the mixture

  • Empty the water from the jar and dry

  • Ladle the hot jam (and we mean hot - be careful!) into the dry sterilized jars and seal with a lid

  • Leave on the bench to cool, then once cooled to touch store in the pantry or fridge

Enjoy your jam on fresh bread, scones or straight from the jar - we won't tell anyone!
