Local Dumplings with Miso Eggplant and Sweet Dipping Sauce

Take away? No way! Not when you can whip up an amazing Asian-inspired dinner like this in 20 minutes! The secret? Well really, the secret is there is no secret - apart from using top-quality ingredients and having fun!

Dumplings are fun and easy to eat - and a particular hit with kids. We've partnered these cute little parcels of goodness with a delightful dipping sauce, miso eggplant and steamed wombok cabbage for a meal that delivers flavour, taste and nutrition.

Now, dust off your chopsticks and let's go!

Dumplings with Miso Eggplant and Lauren's Dipping Sauce

For 4 serves, you'll need:
2 packets dumplings ( choose from Vegetarian, Chilli Chicken or Pork & Ginger)
1/2 Wombok Cabbage, finely sliced

For the Miso Eggplant:
2 x Eggplant, cut into bite-sized chunks
1 tbspn olive oil
2 tbspns white miso paste
2 tbspns Asian Dressing

For the Dipping Sauce:
1 tbspn fresh lime juice or 1 tbspn kaffir lime leaves, finely chopped
1 tbspn Asian Dressing

To make:

  • Make your miso sauce for the eggplant by combining olive oil, miso paste and Asian Dressing. Loosen with a little water, if necessary, then set aside
  • Cook dumplings as per packet instructions
  • Steam sliced Wombok Cabbage until tender
  • Meanwhile, add a splash of oil to a pan, heat until hot
  • Add chopped eggplant, stir-fry until cooked
  • When cooked, pop eggplant in a serving bowl, drizzle with miso sauce
  • Add dipping sauce ingredients to a small serving bowl
  • Serve dumplings straight from the steaming basket with your delicious sides - share and enjoy!
