Apple Jacks with Honey-Rosemary Drizzle

Local Apple Jack afternoon tea recipe at Your Food Collective

Spring has sprung! Let's celebrate the sunshine by cooking up some sweet little apple cakes. Dressed to impress with a generous drizzle of rosemary-infused honey, this recipe is as simple as it is yummy. Requiring some basic cutting, mixing and flipping, you might like to share the cooking with any little chefs in your household.

We've used gorgeous green Granny Smith apples here. With a perfect amount of tartness and crunch, they make an excellent match for the sweetness of local honey and the earthiness of fresh rosemary.

Apple Jacks with Honey-Rosemary Drizzle

For 4 serves, you need:

3 Granny Smith apples, cored and sliced into rounds

2 cups flour (Gluten free? Try Cauliflower flour!)

2 eggs

pinch salt

3-4 sprigs of rosemary

100g honey

Butteror olive oil, for frying

To make: Apple Jacks

  • Mix flour, eggs, salt and 20g (tablespoon) honey in a bowl to form a batter
  • Using tongs or a fork, dip apple rings into batter to cover
  • Melt tbsp butter or oil in a shallow frypan
  • Carefully place coated apple rings into a hot pan
  • Cook for 1-2 minutes or until golden, then flip and cook other side
  • Drizzle with rosemary-infused honey to serve

To make: Rosemary-Infused Honey Drizzle

  • Place remaining honey in a small saucepan with rosemary sprigs
  • Stir over a slow heat for 2-3 minutes
  • Remove rosemary
