    Rustic Apple Galette

    by Lauren Branson

Local Apple Pie at Your Food Collective

Inspired by the cooler nights and the apple harvest Reece Hignell came up with this amazing apple galette. Super delicious and easy to make.

    Rustic Apple Galette

    Yield: 4/5 serves

Time: 15 minutes preparing / 30 minutes to cook

    Pastry

    1 1/4 cup  Plain flour

    1 TBSP Sugar

    1/4 Tsp Salt

    1/2 cup Butter

    4 Tsp cold water

    Salted caramel apple filling

     1/2 cup Sugar

    1tsp Salt

    1/4 cup cream

4 Small  apples (cut into quarters with core removed)

    1. Pre heat oven to 170 C
    2. Place flour. sugar, salt and butter into food processor and blitz until a light bread crumb consistency is made. With food processor still running slowly add cold water until a dough is formed. Remove dough from the food processor and gently bring together on the bench top. Once pastry is formed into one single dough ball, wrap with cling wrap then place into the refrigerator to rest for 30 minutes.
    3. To make apple filling place sugar into a fry pan and heat until melted and golden. Add the salt and cream then stir caramel to combine. Add the apples to the hot caramel and cook for 5 minutes  or until the apple start to soften (however not soft through). Take off heat and sit to the side.
    4. Dust rolling pin with flour then start to roll dough out into a sheet of baking paper. Once dough is rolled into a 10 inch circle start to layer the apple filling into the centre of the dough. Fold the pastry over to cover the edges of the filling than lightly brush with water and dust with a light sprinkling of sugar.
    5. Bake for 30 minutes or until golden.
