I confess, I had to google what a pullet egg is. But I’m glad I did because it was like discovering a hidden little gem that could turn a dull everyday meal into a gourmet delight.

Pullet Eggs at Your Food Collective

Pullet eggs are eggs laid by chickens less than a year old and are typically smaller in size than the mass produced eggs you find on your supermarket shelf. Known for its sweet and rich flavour, the pullet egg produces a relatively large sized yolk, which means less white and more yellow. Yes please! And because of their smaller size, they hold together better when cooking them, so you’ll feel like Nigella when you pull off the perfectly poached pullet egg.

The Golden Egg Farm at Your Food Collective

Pullet eggs are one of the seasonal offering from local producers Allan and Leanne of Golden Egg Farm near Scone in the stunning Upper Hunter Valley. Their pasture fed hens enjoy roaming free while grazing on fresh green pastures of natural grasses, clover and Lucerne. At night, they sleep soundly in their chicken caravans. Sounds like a health retreat for hens. And we all know that pasture grazed eggs are better for us, packing a more powerful nutritional punch than eggs produced in an intensive system.

The Golden Egg Farm at Your Food Collective

Leanne is quick to rattle off the different ways you can enjoy a pullet egg – their small size making them perfect additions to salads, simply boiled to have as a bit-sized snack, or as devilled eggs for the kids. And their customers are loving the value for money, getting two cartoons of pullet eggs for the price of one cartoon of jumbo sized eggs.

Pullet eggs are a particularly good option for yolk based recipes such as aioli, mayonnaise and custard. In our household, we rely on eggs for many a quick dinner fix. A ham and cheese omelette (with spinach snuck in) always does the trick. But if there’s one recipe that includes a handful of eggs and is a winner with every member of the family, it’s the good old faithful zucchini slice. And with Easter around the corner, why not keep the pullet egg shells and have a crack (perhaps not the most appropriate pun here) at decorating mini Easter eggs.
