Local Zesty Flat Bean Salad

Flat beans you say...
One of the best vegetables for your heart, there is so much to love about flat beans!! Jam packed with vitamin A, K, C flat beans are not only good for your heart but help reduce the risk of iron deficiencies.  
Now you know how good they are for you you'll love this salad even more!

Zesty Flat Bean Salad at Your Food Collective

Zesty Flatbean Salad

250g Flatbeans
1 clove garlic
1/8 cup parsley, shredded
1/8 cup mint, shredded
1 shallot, diced
1 tbsp olive oil
1 tsp apple cider vinegar
1/2 tomato, finely diced
Bring a pot of salty water to the boil. Add the flatbeans and cook for a 2-3 minutes to blanch. Remove from water and plunge them into a bowl of cold water. 
Place in a bowl and toss with all of the other ingredients. Enjoy as a side salad or by itself.

These days it’s hard to go past any Ottolenghi recipe! This is my take on spanakopita as a pie inspired by Ottolenghi.  

You can really play around with the herbs and greens based on what you have available. For me it’s dill that sits centre stage. If you can’t get fresh dill (it does have a short season) just use dried, however as with everything if you can fresh is best!
