Homemade broth love is growing and chicken is often a great varity to start with if you're new to DIY broth. Thanks to @reecehignell for sharing his broth secrets with us! 

Pho Style Chicken Broth 

1 whole chicken

1 bunch of spring onions (roots and green removed)

1 chilli

1 clove of garlic (slices in half horizontally)

1 thumb size of ginger (in thin slices)

1 stick of cinnamon

2 cloves

3 star anise

1 litre of water

rice noodles

Method:
Place all ingredients into a large saucepan and bring to the boil. Once boiled reduce to a simmer and allow broth to simmer for 1 whole hour. After one hour remove chicken and carefully shred the meat from the bones. Strain stock to remove ingredients then return to the heat and bring to the boil.Once boiling add the asian greens and rice noodles then boil until greens and noodles are cooked through.

Serve with hoisin sauce and fresh coriander. 

Such a simple meal with so much flavour!!
