Melanie says even though it’s hard to make the photos look pretty, this soup is definitely good for your insides! Jam packed with organic bone broth, fresh YFC veg and shredded chicken, it's oh-so so soothing and nourishing for body mind and soul. She also stresses this kind of soup lends itself to chopping and changing ingredients to suit whatever you have around in the fridge, or in your delivery box!

Ingredients:
- 2 onions(finely chopped)
- 4 carrots(finely chopped)

Silverbeet Greens

8 chicken thighs (boneless/skinless)

Mushrooms(enoki even better)
- 1 lemon

Bone broth / chicken stock to cover

Herbs (sage / oregano / coriander) & dash of sesame oil / fish sauce

Noodles (to add post freezing if you plan on freezing)
Method:

finely chop all your veg and add to a hot butter pan (onions first)

Once all softened, pour in your broth / Hot stock + all your seasoning

Once it’s slowly simmering you can add the chicken thighs (even easier if you have shredded meat prepared but this is if using raw)

Leave to slowly simmer 15 mins. Once chicken is cooked, take them out and shred it all up using a fork in a separate bowl

Shredded Chicken back into the pan and finally add your noodles before Serving!
