Local Burrito Bowl at Your Food Collective


This is the perfect mid week recipe when you're stuck for inspiration and time. It comes together in less than 15 min and is something the whole family will love. It also makes a great lunch.

Ingredients

Salad

750g Plant Based Bolognese sauce
2 red capsicums
2 Avocados
Lime
Coriander
2 cups white or brown rice, cooked
Diablo Chilli Sauce
coconut yoghurt


Salsa

1 punnet of cherry tomatoes
1/4 capsicums
1/2 onion
2 cloves garlic
1-2tbsp fire cider
olive oil
salt
 

Fire cider is a  great way to add an extra kick to the flavour and powerful immune boosting properties to your meal! 

Cook the rice as per packet instructions then prepare the salsa. For the salsa combine all ingredients in a blender and mix until just combined. Spoon into a bowl and set aside. 

Heat the bolognese sauce in a saucepan on medium heat until warm through. Mean while cut the capsicum and avocado. Add the rice to the bowls and top with avocado and capsicum then a generous serving of bolognese sauce. Season with lime, corriander, salt and pepper then top generously with salsa.
