    We all need a winning muffin recipe up the sleeve and we reckon this is a keeper! Sweetened with honey, fresh fruit, currants and dotted with crunchy, nutrient-rich macadamia nuts, these 'Mac-Muffins' are perfect for any time of day, for example...

    Let's talk macadamias and their enviable health benefits for a sec. Macadamias contain healthy unsaturated oils, fibre and plant sterols that help maintain optimal blood supply throughout the whole body, including the heart and brain. With a low glycaemic index (GI) rating, they help deliver a sustainable energy boost to keep you going, too.

    Another reason that this is bound to become your go-to muffin recipe is the ingredients are easily swapped out for whatever's on hand at your place. Almonds, pears, pepitas and olive all can all be subbed-in when necessary, and you'll still get a stellar muffin. Ready to bake up a miracle (or 16)?

    Miraculous 'Mac-Muffins'

    For 16 muffins, you need:

    2 1/2 cups flour
    1 cup honey
    1 tablespoon cinnamon
    2 teaspoons baking soda
    carrots, grated 
    1 large apple, cored and grated
    1 cup currants
    1 cup sunflower seeds
    1 cup chopped macadamias
    4 eggs
    1 cup macadamia oil
    1 tbsp pure vanilla

    To make:

    • Preheat the oven to 350 degrees
    • Grease and/or line your muffin tin with paper liners
    • In a large bowl, combine the flour, cinnamon, baking soda, carrots, currants, sunflower seeds, macadamias and apple and mix well
    • In a separate bowl, whisk together the honey, eggs, oil, and vanilla
    • Add the liquid ingredients to the dry ingredients and mix until just combined
    • Spoon the batter evenly into the muffin tray
    • Bake in the preheated oven for 35 minutes or until a wooden skewer inserted into the centre comes out clean
    • Remove from the oven and allow the muffins to cool slightly in the pan, then transfer to a wire rack to cool completely
    • ... Or, enjoy warm with a generous spreading of butter!
