Summer Lovin' Linguine

We've combined the best of sunshiney summer veg - zucchini, cherry tomatoes, added a hit of heat and the freshness of parsley to create an easy mid-week pasta meal you'll love.

Summer Lovin' Linguine 

For 2 serves, you'll need:
120g linguine
1 clove garlic- sliced
1 red chilli - chopped (as much as you like)
2 tbspn extra virgin olive oil, plus extra
1 x zucchini- grated
8-10 cherry tomatoes  (halved)
1 x lemon- zest and juice to finish
Handful parsley, roughly chopped
Saltand pepper

To make:

• Pop a large pot of salted water on high heat to boil
• Once the water is boiling add the linguine and cook as per packet instructions
• In a medium pan add add 2 tbsp olive oil, garlic, chilli on a medium heat
• Add the zucchini, tomatoes, salt and lemon zest and increase to heat to fry off gently
• Once the pasta is nearly cooked, add parsley, a glug more olive oil and squeeze of lemon
• Drain the pasta, reserving 1/2 cup of cooking water
• Add the pasta to the pan, toss all ingredients together, check for seasoning and add 2 tbsp of cooking water and toss again
